Vegetable Upma is a Nutritious and delicious South Indian savory breakfast recipe. This favourite breakfast/ snack/ tiffin recipe is made with semolina or rava and healthy vegetables. Upma is such an easy, quick and affordable recipe that from the home menu, it is also regularly made and served at offices, restaurants, gatherings and weddings. Upma is served hot with coconut chutney.

Ingredients – Vegetable Upma:

Semolina (Sooji / Rava) – 1 & ½ Cup
Onion – 1 cup finely chopped
Potato – 1 cup diced
Peas – ½ cup
Carrot – ½ cup chopped
Beans – ½ cup chopped
Freshly grated coconut – ½ cup
Green Chilies – 5-6 chopped
Oil – 2 Tbsp

 

Juice of 1 Lime
Curry Leaves – 7-8
Mustard Seeds – 1 tsp
Urad Dal – 1 Tbsp
Bengal Gram (Chana) Dal – 1 Tbsp
Red Chili Powder – ½ tsp
Salt – To Taste
Hot Water – 5 cups
Ghee – 2 Tbsp
Coriander Leaves – 2 Tbsp chopped for garnish
